Tonchin, a popular Tokyo-based ramen chain, solicited Brooklyn firm Carpenter & Mason, Leigh Nelson of LMNOP Creative, and local creatives like ceramicist Helen Levi to come up with an NYC ramen joint that departs from the expected; here are a few ideas to steal from the finished product.

1. Go dark: "“The space didn’t have much natural light to begin with and we decided to embrace that,” says architect Sarah Carpenter.

2. Discover customish: a mix of available and bespoke parts, the result of a tight budget.

3. Pick a palette—then play with it.

4. Mix the angular with the organic.

5. Add some tension: “We were constantly towing the line between refined and not too fancy,” says Carpenter.

6. Paint is your friend.

7. Go bold in the bath.
