Description from Town Cutler
Zanmai, translating to “Luxury” in Japanese, is a product line of culinary knives made by Mcusta (Marusho Industry, Inc.).
Known for their folding knives and scissors, Mcusta, established in 1966, Zanmai produces culinary cutlery in Seki City Japan, a hub of Japanese cutlery manufacturing.
The limited edition Zanmai HZ2 Series is made with a very high grade VG-10 stainless steel, engineered for a long-lasting edge and maximum rust resistance. The Hexagon handle is composed of Pakkawood, which is highly resistant to wear, and a nickel silver bolster. The beautiful thing about these knives is that the steel is heat treated to perfection creating a martensite grain structure, which insures a very sharp edge that lasts and is easy to maintain.
Recommended stone for maintenance: Arashiyama #6,000
This stone works best with this steel because of its fast cutting action and ability to leave your bevel mirrored and clean.
