A fifth-generation company, Wadaman specializes in and is known for roasting sesame seeds. Wadaman sources their sesame seeds from the world’s best growers and then goes through a multi-step process to meticulously sort and clean the seeds before roasting. The fourth-generation owner, Etsuji Wada, has been personally roasting the seeds for over 45 years. Known as the best roaster in Japan, his skills produce sesame seeds with delicate & nuanced flavor like none other.
Wadaman roasts all three varieties of sesame seed – white, golden and black. The roasting process is slightly altered for each one to to take into account differences in each variety such as fat content. In addition to selling these roasted seeds, Wadaman also makes sesame paste and sesame oils. The sesame pastes are made by putting the roasted seeds through a ceramic grinder several times. Wadaman presses their seeds in small batches, yielding wonderful extra-virgin roasted sesame oil.
This deep, rich, nutty black sesame paste can lend itself to many applications, both sweet and savory.
