Garganelli resembles penne, but unlike penne, Garganelli has perpendicular, cross-grooved ridges, hand-rolled from a square of dough, distinct with its shape and visible seam all made with this traditional tool.
Thick and dense, the tubular pasta tubes of this fresh egg-based pasta form from a 2 cm square of paper-thin pasta rolled corner to corner, around the included “bastoncino” dowel and passed over the ridged board.
