No single-use plastics (or any plastics). Rooted in community. Trend-free, enduring interior design. Terraced gardens, including a kitchen garden with fruit trees. No Starbucks. An on-site herbalist. Hotel du Couvent, in Old Town Nice, France, may just be the hotel of our dreams.
Housed in a former convent that dates back to the 17th century, the hotel is new (opening just last month), but its charm is derived from a profound respect for its origins. Nuns constructed the three buildings that make up the convent, using time-tested materials like stone, tiles, wood from a neighboring chateau, and lime whitewash. Not only has Valéry Grégo, the entrepreneur who, ten years ago, saw opportunity and potential in the abandoned property, restored the convent’s architectural integrity, but he’s also honored its spirit as a sanctuary, a place for peace and quiet.
Here’s a peek at the French Riviera’s newest, quietly luxurious destination hotel.
